You've seen how large the ship is. Is it even possible for one guy to run it all by himself?

This is a place where on a regular basis, people are altered physically, mentally, and emotionally with little to no pattern or explanation. Almost everyone is from an alternate reality from everyone else, death isn't permanent, and we're all even speaking the same language. I'd say anything's possible.

Why even bother with the distinction between wardens and inmates then? If the wardens are just as clueless as we are, wouldn't they be just as curious to figure out how things work on the Barge? They seem almost... intentionally disinterested. Does that make any sense?

The knowledge that wardens have files on their assigned inmates is a commonly known fact. The fact that he seems to think you don't know about them isn't exactly reassuring in terms of his intelligence.
